Moist delicious zucchini bread!

Preheat oven to 350 degrees and grease with cooking spray a 9 inch by 5-inch loaf pan. Place parchment paper in loaf pan so the bread can easily be lifted from pan. In a medium bowl combine 3/4 cup of vegetable oil and 2 eggs.
Grate 1 cup of zucchini. in a large bowl combine 1 1/2 cups of flour, 1 cup of sugar, 1 1/2 teaspoons of cinnamon, 1/2 teaspoon of salt, 1/2 cup chopped walnuts and zucchini. Toss zucchini in the flour mixture until coated.
Pour oil and egg mixture into flour zucchini mixture and stir till combined. Pour into loaf pan. Bake for an hour or until toothpick inserted in the middle comes out clean.
Allow to cool for about 30 minutes before slicing.
Slice bread and serve. Enjoy!
